Cocoa powder is a powdered product produced by reducing the fat contained in cocoa liquor and molding it into cocoa cakes. Cocoa powder is categorized as natural, light alkalized, medium alkalized, high alkalized, and black. Each category has a different percentage of fat, Ph, color, and purpose. Cocoa powder is widely used as an ingredient in various food and beverage products such as milk, instant chocolate, ice cream, bakery, pudding and others.
